I don't often post recipes on my blog. Mostly because I am not a good cook. However, this one is foolproof...for most people. I only messed it up a little bit...once.
Cool Whip "Cookies"
Three 8 oz Hershey's chocolate bars (I think you can only get them at Walmart in that size)
12 oz Cool Whip
Graham Cracker crumbs
(that's right, Paige, only THREE ingredients--even you would make them!)
Melt the chocolate in the microwave until it is soft, almost completely melted, but not quite. Let it cool a bit and fold in the cool whip. Shape into balls. (This is where you know whether or not you have let it cool enough--if it shapes into balls.) Roll in graham cracker crumbs and refrigerate until hardened a bit.
That's all! I've also heard that you can skip the rolling in cracker crumbs bit and just pour it all into a graham cracker crust, then cool and serve in pie slices. So basically, it's twice the amount of chocolate as Cool Whip, in case you have to substitute another size of chocolate bar. Simple and delish!
Perhaps you are thinking, Michelle, why are you writing about chocolate? Aren't you dieting?
With you, I share a poem from one of my favorite poets. (I rarely see my backside, so I rarely give up chocolate on it's behalf.)
"What's the use?" by Ogden Nash
Sure, deck your limbs in pants,
Yours are the limbs, my sweeting.
You look divine as you advance...
Have you seen yourself retreating?

We make a variation on this:
WE call them Delectible Chocolate Almond Balls
Use hershey's with almonds
and Vanilla wafer crumbs instead of graham crackers. THe rest is the same.
THEY ARE SO YUMMY!
Why would you think I would not make anything with more than 3 ingredients? I do actually occasionally cook, you know.
Love that Ogden Nash - sorry but the cookies sound horrible!!! Remember eating frozen Cool Whip at Kier's?
I love reading about you and your family. It makes me feel connected. More updates please!!
